Sweetheart Cherry Cake

Valentines day is just a short 2 weeks away. We don't celebrate by buying gifts or going out for an expensive dinner, but I do enjoy baking Valentine goodies for my family. To me, Valentines Day is really about the simple gestures you make to show someone you love them ♥.

That's why I was really excited when I was asked to make a cake using a recipe and pie filling from Lucky Leaf, maker of easy-to-use dessert products. They sent me a heart-shaped cake pan from Wilton, 2 cans of Lucky Leaf Premium Cherry Pie Filling, some CUTE heart- shaped measuring spoons and a recipe for a Sweetheart Cherry Cake.

Lucky Leaf is a 60 year old family owned business who believes in providing simple, delicious dessert products for families. At first, Lucky Leaf was solely dedicated to fresh applesauce. But as the American woman became too busy to make her delicious homemade pies from scratch, they took care of the hard part and started making ready-to-use apple pie filling. Today you can find Premium Cherry, Apple, Blueberry, Lemon, Red Raspberry, Lite, and Crème in your grocery stores — so you can make whichever type of pie you want quickly and easily.

Even if you don't really enjoy pie, you're sure to find a great Lucky Leaf recipe and filling you would like. They show you how to make everything from pies and salads to Sweet & Spicy Chicken...and many more!!

Sweetheart Cherry Cake (from Lucky Leaf)
(printable recipe)

Ingredients

1 (18.25 oz) dry white cake mix
2 large eggs
1 teaspoon baking powder
1 teaspoon vanilla extract
1 teaspoon almond extract
1 (21 oz) can Lucky Leaf Premium Cherry Pie Filling

Preparation

Preheat oven to 325 degrees. Lightly grease 9 x 2 1/2-inch heart-shaped cake pan* (substitute heart pan for 9x13 pan)

Mix together on medium speed, dry cake mix, eggs, baking powder, both extracts, and 1/2 can of Lucky Leaf Premium Cherry Pie Filling until moistened. Fold in the remainging 1/2 can of cherry pie filling by hand until blended (if you'd prefer cherry pieces in stead of whole cherries, then just add the whole can and mix). Batter should appear thick.

Pour batter into pan, and level with a spatula.

Bake for 65-75 minutes for heart shape pan(mine was done in 65), 40-45 for 9x13 pan, or until toothpick comes out clean. Remove cake from oven and allow to cool completely in pan. Invert cake onto a serving platter to decorate.

Buttercream Icing (from Lucky Leaf)

Ingredients

1 cup butter, softened
1 teaspoon vanilla
1 teaspoon almond extract
4 cups (1 pound) confectioners' sugar, sifted
2-4 tablespoons milk
food coloring (optional)

Preparation
Cream butter and both extracts. Slowly add confectioners' sugar, beating well. Add 2 tablespoons of milk. Mix well. If needed, continue adding milk 1 tablespoon at a time until icing is smooth and spreadable. Mix in food coloring, if desired. *This would also be cute in pink or red icing. I colored a small amount brown to pipe around the edges with 1M tip.

Decorating ideas Lucky Leaf suggest: Icing all sides of the cake, then evenly spoon 1/2 can of additional cherry pie filling over top (keeping the pie filling about one inch from the edge of the cake). Pat sliced almonds or mini chocolate chips onto the side of the iced cake.

Optional ideas I thought of

  • you could pipe some of the buttercream around the cherry pie filling, like I did.
  • you could put chocolate chips around the edge of cherry pie filling (like a heart outline)
  • tint your buttercream pink, ice whole cake then sprinkle top with chocolate chips and cherry pie filling
  • add a few mini chocolate chips to the cake mix
  • use a chocolate cake mix instead of white.
  • use 2 cans of any flavor prepared icing instead of making buttercream icing.
there really are just endless possibilities!

This cake was VERY moist and delicious!! I'm a big fan of cherry and almonds....this combination made this cake ever so YUMMY! I can't wait to make it again, and add a little chocolate.

Well...the other night when Greg was propped up on a chair...wifeless in seattle because I was doing sooooo much PINK blogging he said...
"If you make it to 200 followers before Valentines Day...we're going to Daniel's to celebrate!!!!"
...i think he was trying to fit into the BLOG WORLD!!! ;o)
So...quess we are going to Daniels...cause this PINK lady is over 200 followers! Wow!

Let's just leave it at this...it's so fancy...and romantically lit...that when they bring you your steak...they cut into it at the table and make sure it's cooked just perfectly with this adorable little "pen-lik" flashlite! Ooooh I do love that little flashlite.
Once I asked the waiter if I could have it to give to my dad...he is all about his steaks being perfect!!
Of course he gave it to me!

This year on Valentine's Day, hubby and I will actually be travelling to see our son in SC, HOWEVER...I will be making a special early Valentine's Day dinner NEXT weekend. I'm going to attempt scallops (one of his faves). Last year, I made him a special dinner, as well (that surprised even me!) I think he fell in love with me all over again! Oh, and I always make a heart shaped cake for Valentines day, using a square pan and a circle pan. Cut the circle in half, turn the square into a diamond shape, and then add the two halves of the circle to adjoining sides of the square to make a heart. But that pan looks MUCH easier!

Valentine's Day to me has always been the holiday I don't enjoy celebrating. I want my hubby and kids to tell me they love me, adore me and appreciate me any day but on that day when it seems they HAVE to b/c its the day to do it. So, I have always said surprise me another time and it is more fun.

However, with that said THIS year I am thinking I want more. HA! HA! So I told them they have had many years "off" and THIS is the year to surprise me on the 14th! (And my birthday is on the 11th so it should be a double whammy for me! YEA!)

We just celebrated Valentine's Day yesterday. We are traveling this year for my nephew's 1st bday on V day weekend, so we took advantage of grandparents visiting for the weekend and went to see Avatar at the Imax and then enjoyed a nice steak dinner at Shula's.

We were gone most of the day and evening - it was a real treat because we don't go out very often now that we have twins. It was even better since we had a $50 gc to Shula's!

Now to pick up a card, some Lindt truffles and champagne for the actual day (night we get home) to finish our celebration.

For the twins - they are getting new pj's - race cars for the car lover and Lego Batman for the xbox lover (they're only 4 and love pj's). They will get cards and a balloon, but no candy for them (we like having them cavity free).

We will be making home made pizza and curled up together on the couch watching the romance between Ma and Pa Kettle on their farm! We love the old movies and enjoy our time together. Epecially this year! All the children have moved out so it will be just the two of us for the first time!

Like you, we usually keep Valentine's Day a low-key holiday and stay close to home. This year we will have a special dinner at home and perhaps I'll give this delicious recipe a try as an extra treat!

My fiance and I will be heading back home to IL for the weekend to work a cheerleading state competition in Springfield. We just started a tradition last year of pampering ourselves instead of buying gifts. Last year it was pedicures, this year we're thinking massages!

Hi there, was just reading about your beer cheese dip from the link on foodgawker and saw this giveaway :) I have always celebrated similarly as far as just doing something nice and tasty with the people I love. In college my friends and I always had some sort of tasty treat together (and roamed our tiny campus in hot pink all day long). Nowadays V-day falls right next to my anniversary with my boyfriend so we get a two-fer :). This year we are headed to Leavenworth for a winter wonderland and some snowshoeing.

I've never heard of this brand of pie filling so I'd love to try it out. I love the cherry and almond flavor combination so this would be the perfect dessert for me.
For Valentines Day a group of our friends are getting together. We're each making horsdoevres for the party. We're going to each being a romantic couples gift and have a gift exchange. We're going to play a game we made up that is kind of like the "newly wed game" but we're all oldy wed so it will be kind of funny. We also are going to bring our wedding albums to share.
It's going to be a night of good friends and good laughs.

Last year was a very rough year for my husband of 30 years and me. At times I didn't know if we would make it. I'm not sure what will happen on Valentines Day but I do know that I am going to try to do at least 1 thing each day of Feb. to show my love for him. Pray for us. Your blog is fabulous.

I would love to gush about romantic plans but I cannot lie... We recently found out that our son will deploy to Afghanistan on the 15th of February - We had to travel last weekend to Ft. Benning (Georgia) to say good-bye to him. So honestly... I will spend Valentine's Day deep in prayer, asking, (begging) God to bring our boy back home to us. I cannot live without him.

I usually make chocolate, but my sister has recently been told it's off limits ... so Cherries it is! (We will most likely have a family get together after church).
